Mmmmmmmm Muffins!

Long-term readers of my blog will know that I am not a gal that likes to cook. In fact I hate cooking and see it as an ineffective use of time. I get no pleasure from it, and am bored with the results by the time it's ready to eat. I say again - this is not the blog of a natural cook.

But baking is different. Very different indeed. Baking usually requires no peeling, you follow a recipe exactly to get the right results, you can lick the bowl which means easier washing up (although I actually quite like washing up - and hoovering!) and the end product, although waistline expanding, yields a much higher happiness level than cooking the dinner.

Yesterday I decided to take the day off from work. As a freelancer who likes working I often burn out so I sometimes take a self-imposed duvet day. Yesterday I put my out of office on, went to the local cafe and leafed through a book on quilting over coffee and a bacon butty while watching people hurrying around in the rain outside. Then when I got home I decided to make some mmmmuffins.
I had already clocked this recipe for Easy Peasy Muffins on Attic 24's blog so I rolled up my sleeves and got to work. Within an hour I had 8 spice and sultana mmmmuffins which I scoffed entirely by myself over the course of the day. I lounged on the sofa faffing around on the Amazon book website Shelfari whilst half watching The Vikings on TV, (Kirk Douglas in this film was my first crush - a one-eyed pro-rapist blonde. Go figure) then later I did some more work on my crochet blanket. It was a brilliant day.

And here are the results of my endeavours. Note they are being presented in cute yet weird little silicone cases - a Christmas gift from La Tarzane (aka Star Trek Girl) and it was the first time I have used them; though I expect they're going to get tired feet through use from now on. They were photographed on my new yellow kitchen table which is in fact yellower than the most yellow thing you'll have ever seen.

A very productive day indeed me thinks.

Marshmallow Lollies

I'm not much of a cook as you know, I do however like baking or making things rammed with sugar. BBF's Mum hosts a big gathering between Christmas and New Year and BBF's cousins and extended family all come from all around the country to catch up and be fed.

This year I decided to bring something with me so I  knocked together these bad boys. They are pink and white marshmallows on sticks,  dipped in Green and Black's organic chocolate then rolled in coloured or chocolate hundreds and thousands.

They only took about 10 minutes to make although you have to order the sticks off Amazon in advance. A lot of them didn't make it over to her house of course, but those that did went down a storm.

You can wash the sticks so you can use them again, and the best way to get the chocolate to dry is to stand the lollies up in jam jars or mugs.

Lemon Curd Baby!

Today I made my first batch of lemon curd and I am so pleased with myself I could explode! As you know, I'm not into cooking AT ALL but I don't mind making cakes, biscuits and sweets - just not the dinner. I never really bothered before I moved in as I would weigh 15 stone by now.

BBF is getting into preserving things (pickles rather than dead animals) and got a couple of books on the subject for  his birthday the other week. I've always liked lemon curd and it looked quite easy, so after being hassled today because the lemons he bought me had been sitting there for days, I sorted my shit out and got cracking eggs.

It was indeed really easy and I'd made 3 jars before BBF even got back from the dentist (the irony is not lost on me here) I am SO chuffed with myself. At Christmas I made some chocolate truffles, peppermint creams and rose creams, and the other week I made some coconut macaroons. Get me.

I have no inclination whatsoever to make the dinner and luckily BBF is an astonishing cook so I generally don't make any meals at all - he once informed me that I was "the worst cook in the world; you can't even make crumpets in the toaster!". And he was not wrong; I had indeed served up crumpets that were frozen in the middle. Luckily I just lounge around waiting for him to serve up my lunch and dinner each day so I don't have to worry about it - I SO fell on my feet with that one!

They look a bit pale in the photo but I can assure you that my lemon curd is sunshine yellow and tastes divine.
